This Sake is made with California grown rice that has been meticulously polished by massive stone wheels to remove the outer layers of the kernel. This process eliminates the proteins and lipids from the rice kernel and polishes the rice to Ginjo grade as a statement of quality. The Ronin Clear is fermented using Sake Yeast #7 and San Diego Super Ale Yeast. Our proprietary blend of this iconic sake yeast and a San Diego specific variant of California ale yeast is used to introduce a whole new style to Sake.
